<p>The business association of certified quality Landaluz, the trustees of tourism from all the Andalusian provinces, and Junta de Andalucía have collaborated in a reciprocal exchange with the representatives of the <a href="http://www.cuisine.com.ar/" target="_blank">Cuisine&amp;Vins </a>magazine.</p>
<p>This prestigious journal will create a special edition about Andalusia, highlighting its food-processing, gastronomical and cultural richness.</p>

<p>Cuisine&amp;Vins  was first launched in August 1984 and during twenty-five years has set standards, created trends and discovered new professionals. Not only did it accompany us through the years of evolution in both gastronomy and wine-production, but it also opened the door to the Latin American world allowing for constant inter-exchange and development.</p>
<p>During those days in June, we had the opportunity to be in the  presence of Dalila Puzzovio and Mauro Roll, (permanent contributor as fashion editor and photographer respectively) for the magazine. Cuisine&amp;Vins is not only published as a magazine but it is also available as a television channel on cable in countries such as Argentina, Uruguay, Colombia, Ecuador, Venezuela and Miami (USA).</p>
<p>During their stay and thanks to the collaboration of Landaluz Cuisine&amp;Vins had the opportunity to tour various gastronomical establishments and businesses in various provinces such as  Inés Rosales, Acesur Grupo, Bodegas Alvear, The Gambrinus hospitality school, and el Restaurante Gastromium among others. They also had the chance to meet a select group of the most prestigious chéfs from the province of Seville.</p>

<p><strong>Landaluz</strong> could not miss <strong>the 5th international retail show of traders from the Andalusian wine and liquor sector</strong> which was held May 29th in museums of Atalaya and Cadiz. The Ministry of Economy, Innovation and Science organized the event with the help of Extenda – Foreign trade promotion agency.</p>
<p>Our great interest in seeking out and establishing international contacts was the principle reason for <strong>our presence and support.</strong></p>

<p><strong>A high-profile audience</strong><br />
This retail show of Andalusian wines brought together  a total of <strong>33 importers from 13 countries</strong> along with the international media interested in becoming familiar with the 36 Andalusian wine retailers.  Amongst the invitees was the leading<strong> importer of world wines from the United States</strong>.</p>
<p>This was the 5th hosting of this biannual event which was first held in 2003. The key focus was to bring Andalusian products to foreign markets.  This event was supported through collaboration with the city council of Jerez de la Frontera.</p>
<p>The main objective of the event was to present Andalusian retailers with <strong>the opportunity to conduct business </strong>with the international market. For this purpose it joined importers and distributors from Germany, Bulgaria, Belgium, China, Czech Republic, Russia, Panama, United Kingdom and Uruguay.</p>
<p>The show´s principle focus was on  the 36 retailers  from D.O. Jerez-Xérès-Sherry and Manzanilla de Sanlúcar, Vinagre de Jerez, D.E. Brandy de Jerez, D.O. Montilla-Moriles, D.O. Málaga, Sierras de Málaga and Pasas de Málaga and D.O. Condado de Huelva.  Additionally representatives from other Andalusian production zones such as Granada, Almeria, Sierra Norte de Sevilla, and Sierra de Helva etc. were present.</p>
<p><strong>Two promotional events:  more possibilities</strong></p>
<p>The fifth international retail show of Andalusian wine and liquor traders coincides with the hosting of the 2010 Vinoble, -the 7th trade show of the Vinos Nobles from Jerez-Vinoble- which was held between the 30th of May to the 2nd of June in the Alcazar de Jerez, in Jerez de la Frontera.</p>
<p>This facilitated the inter-exchange between professional guests who had attended both events.  The Minister of Fishing and Agriculture, Clara Aguilera, has signed her name along  with the Andalusian Administration of Industry and wine to emphasize the indispensible challenge for the participation and  support of events that contribute to the promotion of our products and to establish international contracts.</p>
<p>During this event, the sector of Agriculture reserved a space for assisting guests where they were able to get familiar with and verify the quality and variety of products from this region.</p>

In 2009 the sales value of Andalusian wines has reached149,610 €. The principle importers of Andalusian wine were ( in this order): United Kingdom, Germany, the Philippines, Holland, The United States, Mexico, and China.</p>

<p>Landaluz and Extenda are holding a promotion of quality Andalusian products in which a total of 37 companies will participate with more than 200 items representing all of the sectors.     </p>

<p>Its origins  go back to 1840, with  headquarters in Dos Hermanas, Sevilla.  Acesur, is  second  in place for culinary oils in Spain and the first with assets that are entirely national.  The company possesses eleven brands —between those that standout La Española, Coosur, Guillén and Coosol Premium—and it produces the most diverse line of products on the market. It produces, refines, bottles and markets olive oil (which constitutes 70% of the revenue). 			<content:encoded><![CDATA[<p>According to a Spanish proverb, <strong>“each pig meets its maker during Saint Martin”</strong>. This refers to the fact that the matanza (home pig slaughtering) starts on the Feast Day of Saint Martin and continues until the carnival celebrations. The process is carried out in the cold of the winter, which offers a natural way of preserving the meat. The matanza remains a popular tradition in many villages of Andalusia but, what was once an economic necessity has become a big celebration which offers plenty of merriment to visitors and keeps locals extremely busy.</p>

<p style="text-align: left;"><strong></strong> As is the case in many other Andalusian villages, in Higuera de la Sierra (Huelva) traditional pig slaughtering techniques have hardly changed with the passing of time. The process is still carried out by hand in a completely natural manner, although a few minor changes have been introduced. The old salting vats have been replaced by freezers, and instead of using two knifes for grinding the meat, today the process is carried out with a manually operated machine. But the grinding process comes later; the very first step of the whole operation is the actual slaughtering of the pig, which is the main protagonist of this ritual.</p>
<p>The <strong>pigs </strong>which are to be slaughtered are specially fattened for a year on a diet of acorns and corn. On the morning of the feast preparations start early. After weighing the animal, the <strong>matarife or matachín</strong> (the butcher) drives a knife of approximately 30 cm into the neck of the pig, which is held by four or five men.</p>
<p>If the matachín is experienced he will make a clean, firm cut at the jugular, and the animal will take only two minutes to die, the time it takes for all the blood to flow out. Once the pig is dead, the hair is burnt off and the animal is cut open lengthways to extract the heart, the lungs and the rest of the innards. The matachín then halves the carcass and completes the cutting. Some of the parts – the ham, bacon, ribs, etc – are stored in the salting room; the rest is used for making sausages and crackling.</p>
<p>There is a belief that if the pig suffers its meat won’t be good. 27-year old butcher Agustín believes that pigs do not suffer during the matanza  (the slaughtering process) “because they are not maltreated”. For him the matanza is a natural thing which is part of an age-old tradition, but he is aware that some people do not approve of it. “I see this everyday–he says –people from the cities do not understand it because they have never actually seen how it’s done, so they are suspicious of it, but this is something that I have been seeing on a regular basis since I was a child”.</p>
<p><strong>The mondongueras</strong></p>
<p>Everyone has a part to play in the matanza. The mondongueras are the women who separate the different parts of meat for making sausages and other cured meats. They process and spice the meat and then stuff it into the animal’s intestines (which have been previously boiled to prevent them from breaking and serve as casings).</p>

<p>The term mondonguera is derived from mondongo, which means gut. Patrocinio and Catalina have been carrying out the traditional work of the mondongueras since they were girls. The former recalls with nostalgia how, at the age of twelve, she used to help her mother with the chores of the matanza, “because this type of work was always carried out by women”. Patrocinio ended up hating meat, “the worst thing is the smell of the intestines, which stays in your hands for a month, no matter how much you wash them”, she explains.</p>
<p>Until very recently, the matanza used to last for four or five days but the faster pace of modern life has also arrived in the village and now the processing of the meat is completed in just two days. Matachíns are still in charge of processing and removing the fat of the hams, and completing the salting process, whilst mondongueras continue to separate the different types of meat for making sausages.</p>

<p>Each type of meat has its use. The finest bits are used to make red chorizo, the rest will be used for preparing salchicon and blood pudding. The secret of a good chorizo lies is in the curing time and the spices used (cumin, garlic, salt, paprika and pepper).  Salchichón is made with wine, garlic and salt. Together with the spices, the pig’s tongue (previously boiled) is used to make black pudding. A different variety of black pudding, the morcillas tontas, are prepared with parsley, mint, garlic, pepper, salt and cumin.</p>
<p>Every single part of the pig can be eaten and tastes good – from the tongue, the tail, and the cheeks (which have seven different flavours) to the castañuelas (salivary glands), the loin, the ribcage, and blood. After processing and spicing the meat in the cucharros (cork containers) the mondongueras stuff it into the intestines of the slaughtered animal, which provide the best casing for sausages although when the amount is insufficient synthetic casings are also used. After the process is completed, the sausages are hang and left to cure, as it is done with the hams, and several months later, they will be ready for eating.</p>
<p>Patrocinio and Catalina, who are over 60, complain that young people today do not like doing this type of work: “which is a real pity because it means that the tradition will be lost”. The two women themselves are not that keen on the work, but, as Catalina says, “someone’s got to do it”.</p>
<p>The story repeats itself every year: the pigs are raised and fattened until the time to slaughter them comes. A feast which combines tradition and celebration, but may soon be only remembered by the oldest people in the village.</p>

<p>Recovering the original exporters and crossings to London back in 1835, <strong>Gonzalez Byass </strong>wine cellars celebrates its <strong>175th anniversary </strong>by embarking a wineskin barrel of Tio Pepe in the Galleon of Andalusia. This ship, which aims to travel to the <strong>Shanghai World Expo</strong>, will bring to its visitors a part of the Andalusian culture and the most international dry sherry, <strong>Tio Pepe.</strong></p>

The famous <strong>&#8220;dizzying&#8221;</strong> of wines has been a common practice up until the nineteenth century. These ‘dizzied’ wines have improved markedly with the sea travel and their value is increased so much that they were considered real treasures. Among them was Tio Pepe, which the Gonzalez Byass wine cellars archives attest that their 1838 inventories there were 20 wineskin barrels listed  in the <strong>Fragata Victoria</strong> ship that traveled to Manila and 8 wineskin barrels in the Colón ship also traveling to Manila.</p>
<p>And to illustrate the importance of these wines, a passage of the work of<strong> Miguel de Cervantes</strong>, &#8220;The work of Persiles and Sigismunda &#8220;, where he states at the dinner to Prince Arnaldo “ they filled the glasses with generous wines, of which, when these wines traveled the sea from one end to another, they improved in taste to have a nectar like quality&#8221;.</p>
<p>Tio Pepe joins this initiative framed within the project<strong> &#8220;Guadalquivir River of History&#8221; </strong>and he tries to spread the broad<br />
knowledge of cultural, artistic, economic and scientific heritage that has passed through this river in Andalucia. This has been cast as a ‘galleon’, a type of ship that starred in the commercial trade that maintained Spain with America and the Pacific islands for three centuries.</p>
<p>This vessel, carrying with it various goods, will also house a wineskin barrel of Tio Pepe. Resulting from a process of research, design and unique construction, this seventeenth century replica will travel to the Shanghai World Expo. González Byass wine cellars joins this demonstration of Spanish culture on a journey that will visit a host of cities and will connect Tio Pepe fine wine across the globe.</p>
